Grow your own Japanese sweet potatoes!
These yellow fleshed sweet potatoes are deliciously sweet, with an amazingly creamy texture. Their young leaves are also edible, and can be stir fried or eaten raw.
Plant them in the spring after the last frost and ensuring they receive full sun. They will grow in a wide amount of soil conditions, they do best in well draining soil, and adding lots of organic material will make it easier to harvest.. The are fairly drought tolerant. Mulching can help keep the soil moist and regulate temperature.
Japanese sweet potatoes should be harvested in the fall, before the first frost, when the leaves begin to yellow and the vines start to wither. The potatoes should be dug up carefully to avoid bruising, and then allowed to cure in a warm, dry place for a week or two to develop their characteristic sweetness.
