Pole Beans

We call these Mama Chang's Beans because we don't actually know what variety they are. The seeds came with Judy's mother when she fled Laos — they travelled through the Ban Vinai refugee camp in Thailand, then to Santa Barbara, then to Georgia, and now they grow here in Prince Edward County.

Long, flat, and substantial — similar to Romano beans but with more character and a silkier texture when cooked. Delicious with a little char, excellent braised slowly, and perfect in the kind of cooking they were always meant for.
